One of the most popular desserts is waffles. They are lush and soft, with a deep embossed pattern or, conversely, the thinnest and crunchy, with and without fillings, of various shapes. Dutch waffles, which are two crispy rounds, layered with viscous caramel filling, are among the top popular options for this baking.

Classic Dutch waffles in an electric waffle iron

In the Netherlands, this baking is called sling wafers. These are two round wafers with a diameter of about 10 cm, glued together with caramel or other filling.

To bake such a dessert, for the test you need to prepare:

  • 60 ml of milk;
  • 20 g instant yeast;
  • 150 g of granulated sugar;
  • 250 g butter;
  • 2.5 g of salt;
  • 500 g premium flour.

Algorithm of actions:

  1. Dissolve yeast with a little sugar in warm milk (20-30 g). Melt the butter to a liquid, but not hot state and, together with salt and the rest of the sugar mass, add to the dough.
  2. Add a little flour, knead not too steep dough, which is given 45 minutes in the heat to ripen.
  3. From the dough to form balls 3 - 5 cm in diameter, from which to bake round wafers. Cut hot corrugated rounds on a stencil so that the products are perfectly even, and then glue in pairs with the selected filling to each other.

Cooking in a multi-bakery

Using the appropriate multi-baker panel for cooking, you can bake traditional Dutch waffles according to the previous recipe or from peanut-flavored dough.

Take:

  • 2 eggs;
  • 60 g peanut butter;
  • 400 ml of milk;
  • 20 g of milk powder;
  • 260 g of flour.

How to bake waffles in a multi-bakery:

  1. Sift the milk powder with flour.Shake eggs, peanut butter and plain milk with a whisk until smooth. Pour loose components into the mixture and knead the dough, thick as ryazhenka.
  2. Pour 2 tablespoons of the dough onto the heated panels of the multi-baker, press firmly on top of the lid and cook until light brown. It will take from three to four minutes.

Recipe for a regular waffle iron

This version of Dutch waffles is a little surprising in composition, because in it almost a third of the flour is replaced with starch, but this is what helps to achieve a crunch.

As a fragrance for this baking, you can take not only vanillin, but also various others, for example, fruit essences.

The proportions of the products in the test:

  • 3 eggs;
  • 70 g of butter;
  • 180 g mayonnaise;
  • 180 g of sugar;
  • 5 g of baking powder;
  • 260 - 390 g of flour;
  • 130 g of starch;
  • vanillin.

Step-by-step recipe for an electric waffle iron:

  1. Beat eggs with sugar, add mayonnaise and liquid butter. Stir to make the mixture homogeneous.
  2. Pour starch, baking powder and flour into one container, carefully stir with a whisk and pass through a sieve. Then partly mix into the liquid component. The result is a rather tight mass. After cooling the butter, the dough will become thicker. Therefore, to prevent the wafers from being too hard, it is better to add dry components when the temperature of the liquid oil mixture approaches room temperature.
  3. Divide the dough into 10 - 20 identical lumps, depending on the desired size of the wafers. Lightly grease the frying surface of the waffle iron with a brush and warm the device thoroughly.
  4. Flatten each bun of dough with your hands into a pancake and put in the center of the frying panel. Press the other side and the oven to a beautiful caramel color.

If desired, a finished hot product with a knife can be given a more regular shape.

With boiled condensed milk

The simplest and most popular filling for wafer rolls and wafer cakes based on boiled condensed milk is also applicable to Dutch sling wafers. You can significantly save time on the preparation of the filling by buying a ready-made toffee, but it is better to spend a few extra hours to be absolutely sure of the quality of the finished product.

To smear wafers with boiled condensed milk you will need:

  • 370 g (1 can) of condensed milk;
  • 200 g of butter.

Cooking toppings:

  1. Put the condensed milk in a saucepan of a suitable displacement, pour cold water and put on fire. When the water in the pan boils, reduce the heat to a minimum and cook the mixture for 2.5 - 3 hours. After, remove from the stove and cool in water.
  2. Remove the butter from the refrigerator in advance so that it has time to warm up and soften at room temperature.
  3. Beat soft butter with a mixer, then, while continuing to whip, add the cooled boiled condensed milk in several steps. The cream is ready and they can glue the waffles.

Dutch caramel waffles

This layer for sling wafers is traditional.

Typically, Dutch housewives cook it from brown sugar and molasses, but you can use your favorite salted caramel recipe or a simpler way to make hard toffee:

  • 200 g of hard toffee sweets (for example, "Kiss-kis" or "Golden Key");
  • 60 ml of milk;
  • 50 g of powdered sugar;
  • 50 g of butter.

How to cook caramel filling:

  1. First you need to do the release of sweets from wrappers, weighing the required amount of powder of butter and milk.
  2. Pour milk into the bottom of the stewpan with a thick bottom, sift the sweet powder, put the butter and sweets, cut into small pieces. Put the container in a quiet fire or water bath.
  3. Strain all the components of the caramel, continuously mixing so that the mixture does not burn, until a homogeneous cream. You need to work with the finished stuffing very quickly, since it quickly hardens.

With honey layer

Dutch waffles with a honey layer will appeal not only to honey lovers, but also to cinnamon lovers.

The tastes of these products combine well with each other, but if someone does not like the bright cinnamon aroma, the amount of aromatic spice can be reduced or this ingredient can be completely eliminated:

  • 120 g of honey;
  • 70 g of butter;
  • 50 g of sugar;
  • 20 g of cinnamon.

Working process:

  1. Heat honey, sugar and cinnamon over low heat until smooth. It is not necessary to bring the mixture to a boil, 60 degrees will be enough. This will help preserve the beneficial properties of honey and make caramel uniform.
  2. Once the sugar grains have melted, remove the honey from the heat and add the butter. Stir the filling until smooth and proceed to layering the finished wafers.

Dutch waffles with cream

A layer of sugar and cream wafers is especially sweet and viscous - a real dream for sweet tooth.

It is not difficult to prepare it, but observing some of the subtleties and strictly following the proportions of the ingredients is simply necessary:

  • 200 ml of fat cream (from 30%);
  • 250 g of sugar;
  • 30 g of butter.

Cooking:

  1. For cooking, you will need a pan with a thick bottom and high sides. Pour the amount of sugar indicated in the recipe into it and, with constant stirring, melt it. It is important not to burn the product so that the caramel does not turn out too dark and bitter.
  2. In parallel, thoroughly warm the cream, but do not bring them to a boil. Pour cream into melted sugar in a thin stream, stirring the mixture. This will prevent the formation of lumps, which will then be difficult to breed.
  3. Next, cook the caramel to a beautiful golden color and density. At the very end of cooking, add a small piece of butter and stir.

How to make with chocolate

Chocolate ganache is a fairly stable cream, which can also be a filling for Dutch waffles.

Chocolate for the layer can be used dark, white or milk, depending on personal preferences.

The list of necessary products for the chocolate layer:

  • 100 g of chocolate;
  • 50 g butter;
  • 60 ml of heavy cream.

Cooking method:

  1. In a water bath, not allowing the chocolate to heat above 60 degrees, melt a broken tile into pieces with butter.
  2. In a microwave or in a bath, warm the cream to the same temperature as chocolate. Pour the hot cream into the melted chocolate, mix and briefly set aside. When the cream begins to thicken, they can smear Dutch waffles.
