Khachapuri on kefir with cheese in a pan

With cheese in a pan - the most popular version of the dish. Just a little time, and a fragrant tortilla will be on your table.

Required Products:

  • a pinch of salt;
  • a spoonful of sugar;
  • 0.3 kg of flour;
  • 250 grams of feta cheese and mozzarella;
  • half a small spoon of soda;
  • a glass of kefir.

Cooking process:

  1. First, take care of the filling. Grind both types of cheese on a coarse grater, mix with each other. If desired, you can add a little more finely chopped fresh herbs.
  2. Pour kefir into a bowl and simply take turns adding the remaining loose components from the list into it, gradually mixing and bringing to a dense mass that can be rolled out.
  3. We divide it into several parts, most often four are obtained, and each is turned into a thin sheet of round shape.
  4. At the very middle we place a little filling, about 130 grams, fold the edges towards the center and connect them so that something like a bag comes out.
  5. We walk along it with a rolling pin or just hold it with our hands and get a tortilla with a filling.
  6. We spread it in a pan and fry on both sides for about five minutes. We perform the same actions with all the blanks.

Oven recipe

The khachapuri dough in this version is prepared according to the usual recipe, the only difference is that the cake is not fried, but baked in the oven.

Required Products:

  • a pound of mozzarella;
  • half a spoonful of soda;
  • about two glasses of flour;
  • a spoonful of sugar;
  • 0.25 liters of kefir;
  • a pinch of salt.

Cooking process:

  1. Of all the components listed, except for cheese, knead the dough.Add them to the container in turn, starting with kefir and ending with flour. Perhaps the flour will go a little less, or vice versa more, see the consistency. The mass must be pliable, roll well.
  2. We divide it into several parts and roll it into medium-sized circles.

The Georgian recipe consists of several other products and is generally cooked on yogurt, but in this case, kefir is also quite suitable.

  • 30 grams of butter;
  • about 350 grams of flour;
  • one egg;
  • a pinch of soda;
  • 200 grams of mozzarella or suluguni;
  • a glass of kefir.

Cooking process:

  1. Grind cheese with a coarse grater, beat an egg to it, add chopped greens and mix well.
  2. From the remaining components, make the dough by simply combining all the products in the container.
  3. Roll a few round and thin cakes and put a little cheese filling on each. Do not forget to leave a little cheese for powder.
  4. Form a bag from each blank, then press with your hands and make a cake.
  5. Put them on a baking sheet, sprinkle with cheese on top and bake for no more than 10 minutes at 250 degrees.

Adjarian khachapuri on kefir

Essential Ingredients:

  • a spoon of salt;
  • a glass of kefir;
  • about three glasses of flour;
  • a teaspoon of yeast and sugar;
  • four eggs;
  • 300 grams of cheese.

Cooking process:

  1. Heat the indicated amount of kefir a little, but so that it is warm, not hot. Add sugar, salt and yeast to it. Leave for a while, about 15 minutes.
  2. Then pour this mixture into the flour and knead until a dense consistency, i.e. dough, is formed. We remove it for an hour and a half so that the mass can increase in volume.
  3. After that, we divide it into several parts and make a boat out of each, at the same time, not rolling out, but forming it with our hands.
  4. Grind the cheese and put it in a boat. From above, you can add a few spices if desired.
  5. We bake the blanks at 180 degrees for about 20 minutes, then immediately break into the boat in the egg so that they do not spread and cook for another 4 minutes.

With Adyghe cheese

Required Products:

  • a spoon of yeast;
  • 0.25 kg of Adyghe cheese;
  • 150 milliliters of kefir;
  • a pinch of salt and sugar;
  • one and a half glasses of flour;
  • 70 grams of butter.

Cooking process:

  1. We warm up the kefir, add all the dry components to it according to the list, mix it and bring it to the test state. Leave it for at least 40 minutes.
  2. Grind cheese and butter.
  3. We divide the dough into parts and make thin round layers from it, where we place the filling: a little cheese and butter.
  4. We fix the edges in the very middle, press with our hands and get a cake.
  5. We perform the same actions with all the workpieces and bring them to brown for 15 minutes at 200 degrees. If desired, they can be coated with oil on top.

Lazy khachapuri on kefir

Kefir dough, and so does not require much effort, but these efforts can be minimized at all, if you prepare a lazy version of the cake.

Required Products:

  • 100 grams of kefir;
  • a pinch of salt;
  • 0.1 kg of flour;
  • 200 grams of cheese;
  • two eggs.

Cooking process:

  2. Pour the resulting mixture into the pan, cover with a lid and keep on fire until it turns brown, then turn over and bring to the golden color and the second side.

  • 0.25 liters of kefir;
  • 0.2 kg of cottage cheese;
  • two glasses of flour;
  • four tablespoons of sour cream.

Cooking process:

  1. Add the indicated amount of salt and soda to kefir, then add flour and form a dough that does not stick to your hands.
  2. We send cottage cheese to the bowl, add the grated cheese and sour cream, mix everything.
  3. We make thin round billets of dough, put the filling in them, fasten them in the very middle of the edge of the dough, then press with a hand or a rolling pin and get a tortilla with a filling.
  4. Fry each for about five minutes on both sides in a hot pan.

In Imereti

Required Products:

  • one egg;
  • a glass of kefir;
  • a spoonful of salt and sugar;
  • a pinch of soda;
  • 0.4 kg of Imereti cheese;
  • about three glasses of flour.

Cooking process:

  1. We drive the contents of the eggs into the container, stir with a whisk, add the indicated amount of salt and sugar, then pour in the kefir.
  2. Put the soda, see how the bubbles went and then add the flour.
  3. We remove the resulting dense, not sticky to the hands mass for about 50 minutes.
  4. After this time, we divide it into several parts and each turn into a thin circle.
  5. We fill the blanks in the middle with grated cheese and slap them in the form of a bag.
