How to cook whites in a pan, in the oven

Cooking Kainars - that is what our Belyash Tatars call it - is divided into two stages. First you need to knead a tasty dough of the desired consistency, so that the whitish turns out to be airy and tender. The second stage is the manufacture of stuffing from minced meat.

Classic dough for whitewash

Classic dough is kneaded on the basis of water with the addition of yeast. Such a basis for whitewash invariably comes out very supple and porous, and the water in the dough will allow you to fully experience the amazing taste of the meat filling.

Secrets of juicy stuffing with minced meat

To make the whites juicy, it is better to use two types of meat for minced meat, for example, pork and beef. This is the most important rule.

  1. Do not allow the filling to turn out dry. Therefore, you can pour a little water into the cooked meat.
  2. If you make a filling for meat whites, then with it through a meat grinder you need to skip the bulb or garlic.
  3. To make the mincemeat inside the kaynar well fried, put it in the pan with the hole down, fry, and then turn it on the other side.

How to cook meat in a pan

What you need to take:

  • yeast - 12 g;
  • milk - 0.2 l;
  • minced pork - 0.4 kg;
  • flour - 0.4 kg;
  • two onions;
  • salt to taste;
  • one egg;
  • vegetable oil - 46 ml;
  • ground pepper;
  • sugar - 16 g.

Cooking Algorithm:

  1. We start the execution of snacks with the manufacture of dough.Pour a raw egg into a container with high sides, add salt, sweet sand to it, pour room temperature milk, vegetable oil and diluted yeast. It remains to pour the flour and mix everything.
  2. We put the container with the dough in a dark place and do the filling.
  3. In the minced pork we sprinkle salt, medium-sized chopped onions and ground pepper.
  4. Once the bun has risen, sprinkle it with a little flour and crush it with your hands.

  6. In the middle of each we spread a little mincemeat, close the edges of the dough, but at the top of the whitewash you need to leave a hole.

From dough based on kefir

List of ingredients for the filling:

  • black pepper to taste;
  • ground beef - 0.25 kg;
  • onion - 1 pc.;
  • salt to taste.

For the test:

  • soda - 3 g;
  • flour - 230 g;
  • vegetable oil - 50 ml;
  • kefir - 250 g;
  • salt - 5 g.

Cooking whites on kefir:

  1. Finely chop the peeled onion and pour it into a bowl with minced meat, add salt, pepper and mix. If it seemed like the minced meat was thick, just pour a little water or broth.
  2. We cover the minced meat with a film and hide in the refrigerator while preparing the dough.
  3. We combine kefir and flour in a bowl, add baking soda and salt. Now you can form the dough.
  4. Pour oil into it and knead until it ceases to be sticky. We leave the basis for the whites for 30 minutes.
  5. We take out a baking sheet in advance, grease it with oil. Divide the dough into 8 - 10 small pieces.
  6. Knead each into a cake directly on a baking sheet. We put the meat filling on them, collect the edges, leave the middle open.
  7. It remains to fry the workpiece in boiling oil until a golden film.

Lazy whites at home

The necessary components of the recipe:

  • sugar - 4 g;
  • minced meat - 0.5 kg;
  • ground black pepper - to taste;
  • egg - 1 pc.;
  • flour - 0.5 kg;
  • soda - 5 g;
  • onion - 1 pc.;
  • salt - 6 g;
  • lean oil;
  • kefir - 400 g.

Cooking method:

  1. We warm the kefir to a warm state. Pour salt, sugar, soda into it and leave for 15 minutes.
  2. Pour the egg into the minced meat, add the chopped onion, black pepper and salt. Knead the composition with your hands.
  3. Gradually pour flour into the kefir mass, constantly stirring with a spatula to avoid the formation of lumps. The consistency of the dough should be like sour cream.
  4. Using a tablespoon, spread the liquid dough on the oil warmed up in a frying pan and forcemeat immediately. Remember to leave holes at the top.
  5. Fry until golden on one side, then turn over.

On yeast dough

What you need to take for the test:

  • salt - 10 g;
  • water - 0.4 l;
  • any vegetable oil - 45 ml;
  • flour - 0.7 kg;
  • wet yeast - 40 g;
  • sugar - 15 g;

For filling:

  • salt to taste;
  • minced meat - 0.4 kg;
  • spices to taste;
  • one onion.

Step-by-step instruction:

  1. Fill the bowl with water, transfer the yeast there, pour sugar. Stir the composition with a spoon, then pour in the oil and add salt.
  2. Pour 350 grams of flour, mix gently. Add the remaining amount of flour and form the dough with your hands.
  3. For half an hour, put the dishes with the dough into heat so that it rises.
  4. Process the peeled onions on a grater. Combine it with spices and salt and pour the whole mass into the prepared minced meat. Stir with a spatula.
  5. Sprinkle flour on a clean countertop. Roll out the dough and cut out the mugs with a glass.
  6. In the center of each cake we spread the minced meat with a teaspoon. We form the whites and cook in a pan with butter. As soon as the pies get a golden hue, turn off the stove.

Lush pastries in the oven

Product list in the dough:

  • sugar - 20 g;
  • dry yeast - 15 g;
  • milk - 0.21 l;
  • wheat flour - 0.5 kg;
  • a piece of oil - 45 g;
  • two eggs;
  • salt - 18 g;

Filling:

  • three garlic cloves;
  • champignons - 0.4 kg;
  • salt to taste;
  • pork - 0.3 kg;
  • ground pepper and fresh herbs to taste;
  • beef - 0.5 kg;
  • four onions.

Algorithm of actions:

  1. We conduct both types of meat through a meat grinder and add greens.
  2. From the ingredients for the dough, we prepare the basis for the whites. After the dough has risen, cut it into pieces.
  3. We roll out each piece with a rolling pin on the countertop. On the cakes we shift the forcemeat, turn the dough into whitewash.
  4. We spread the blanks on a baking sheet, grease each of them with a raw egg.

  • dry yeast - 5 g;
  • ground beef - 1 kg;
  • oil - 300 ml;
  • flour - 0.6 kg;

  • granulated sugar - 40 g.

  1. Pour flour into a deep bowl through a sieve, add salt, yeast and sugar.
  2. Pour a little water and 20 ml of sunflower oil into the mixture. Pouring the remaining water, gradually kneading the dough.
  3. Lubricate the gingerbread dough with a small amount of oil and leave for 20 minutes.
  4. After that, knead it with your hands and put it under a towel for an hour.
  5. Combine the minced meat with salt, chopped onion, pepper.

You will need:

  • flour - 570 g;
  • boiling water - 200 ml;
  • salt - 10 g;
  • bulb;
  • sugar - 16 g;
  • vegetable oil - 50 ml;
  • dry yeast - 15 g;
  • warm water - 200 ml;
  • minced meat - 0.4 kg;
  • salt with spices to taste.

Cooking Option:

  1. In a deep container we combine salt, 70 grams of flour, vegetable oil and sugar. Pour boiling water over the mixture.
  2. When the mass cools down a little, pour the yeast, the remaining flour and pour warm water. Knead the dough and immediately divide it into pieces.
  3. From minced meat, onions and spices, we prepare meat filling.
  4. Roll out each lump of dough and put aromatic minced meat in the middle. We form the whites and fry in a pan, first lowering them with the hole down.

Oven-whitewash in the oven

The composition of the recipe for the filling:

  • water - 70 ml;
  • beef meat - 0.5 kg;
  • salt to taste;
  • two onions;
  • black pepper to taste;

For the basics:

  • kefir - 300 ml;
  • soda - 3 g;
  • flour - 530 g;
  • salt - 10 g;
  • a piece of butter - 200 g;
  • vegetable oil for frying.

How to make whites:

  1. Combine salt, flour and sugar. Add softened butter and with a knife mix the dough into crumbs.
  2. Pour 200 ml of kefir there, mix and introduce the remaining kefir.
  3. The resulting ball of dough is closed in the refrigerator for 30 minutes.
  4. We begin to prepare minced meat for whites. To do this, grind beef and bulbs in a meat grinder. Add salt, water and pepper to the meat mass.
  5. We cut the frozen dough into small pieces, form cakes from them, onto which we put the minced meat. We wrap the blanks and give them the shape of the whites.

Recipe Components:

  • a piece of butter - 50 g;
  • four potatoes;
  • dried herbs - 8 g;
  • one carrot;
  • yeast dough - 500 g;
  • salt to taste;

  1. In the usual way, knead the yeast dough, put it to rise in the heat.
  2. Cut peeled potatoes into cubes. Grind the prepared carrots on a grater.

  5. We divide the approached dough into pieces, we turn each of them into a cake, on which we put the potato filling.
  6. Form a bag with potato cakes with a hole in the middle.
  7. We cover the baking sheet with parchment, put the whites on it.
  8. Shake the chicken egg separately and grease the surface of the dough with it.
