Preparing bull eggs for cooking

To prepare the discussed part of the bull carcasses tasty and correctly, the first thing you need to do is prepare the testes.

You can buy only fresh offal - with a dense texture, a pale pink shell and clearly visible vessels. Eggs of a gray-green or grayish hue are unsuitable for cooking.

Scheme of preparation of bovine testes:

  1. Rinse product thoroughly.
  2. Air dry 10 to 12 minutes. The weathered casing is easier to remove without damaging the main product.
  3. On the dried skin, make longitudinal cuts. The optimal depth of each is about 2 cm.
  4. Gently pull the upper layer with your fingers, as if turning the offal inside out.
  5. Next, remove the inner shell.
  6. Cut the remaining soft part into random pieces.
  7. Rinse thoroughly by-product. It is important to remove any remaining seminal fluid from the meat during the water procedures. It is necessary to work with the pulp of the testes carefully, as it can easily fall apart and turn into minced meat.

Then you need to lower the flesh of the eggs into boiling water and cook for 6 - 8 minutes. After this treatment, it is worth rinsing the product again with hot (!) Water and frying or baking.

Fried bull eggs in a pan

Ingredients:

  • bull eggs - 4 pcs.;
  • onion - 2 pcs.;
  • salt and aromatic herbs;
  • oil.

Cooking:

  1. Prepare an offal according to the scheme described above.
  2. Chop the onion into large half rings and fry in hot oil until soft.
  3. Send pieces of bovine eggs to the vegetable in the pan.

  • salt, spices.

Cooking:

  1. To clear eggs of all excess. Each cut into 4 parts.

Serve the prepared offal slices together with the resulting thick sauce and fresh bread.

Skewers of bull eggs

Ingredients:

  • bull eggs - 3 pcs.;
  • bacon - 3 strips;
  • cherry - 1 handful;
  • salt, seasoning.

  1. Peel the eggs. Then soak them in cold water for 2 hours.
  2. Boil in clean salt water for 7 - 8 minutes. Drain and rinse the meat product again.

  • onions - 3 to 4 heads;
  • sour cream - 170 - 200 g;
  • mushrooms - 280 - 300 g;

Ingredients:

  • bull testes - 1 kilo;
  • potatoes - 300 g;
  • tomato and red bell pepper - 2 pcs.;
  • onions and carrots - 1 pc.;
  • fresh salt, flour, basil and cilantro.

Cooking:

  1. Boil the peeled eggs for 6 - 7 minutes, then rinse.
  2. Then lower it into fresh boiling water and cook another 17 to 20 minutes. Rinse again.
  3. Cut the meat into thin slices. Roll in flour with salt and fry in a pan with butter until cooked.
  4. Fry the potato wedges with salt in a separate pan until soft. Then add to them slices of the remaining vegetables.
