It's no secret that the maximum benefit is concentrated only in fresh berries and fruits, and any preparations from them reduce the amount of vitamins in the final product. Therefore, only desserts without prolonged heat treatment will be able to maintain the benefits of cranberries. And the best solution is cranberries in sugar. You can use whole berries coated with sugar or sweet icing, or crushed cranberries with sugar, prepared according to the principle of “cold” jam.

Cranberries in sugar - a simple recipe

This simple berry dessert recipe is made from products that can always be found in any kitchen. It remains only to buy cranberries and start cooking.

Take:

  • 500 g of cranberries;
  • 2 protein eggs;
  • 500 g of powdered sugar.

Stages of cooking:

  1. Pour cranberries with water and mix. As a result of such actions, litter that could get into the berries will surface. It should be collected using a strainer, drained water, and dried cranberries for 1 to 2 hours, so that there is no moisture on its surface. For this, the berries are laid on a towel and periodically mixed.
  2. Stir the proteins (important: do not beat!) Until a homogeneous consistency. Foam formation must be avoided in every possible way, otherwise air bubbles will not allow the proteins to cover the berries with a uniform film.
  3. Dip the cranberries in small portions into proteins, then, catching the berries with a strainer (this will allow excess proteins to drain), transfer them to a container with powdered sugar. Roll cranberries thoroughly and transfer to a container for serving or storage.

Recipe for winter without cooking

In sugar, cranberries according to this recipe are not too sweet, but due to the lack of heat treatment, they retain all their vitamin benefits.

For this winter harvest you need to take:

  • 1000 g of cranberries;
  • 900 g of sugar.

Working process:

  1. Washed and dried berries pour 600 g of sugar and knead with a potato masher. After that, remove cranberries overnight in the refrigerator. This is necessary so that the sugar is completely dissolved in the excreted juice.
  2. The next day, spread the cranberries in sugar in half-liter jars, not reaching the edge of 1.5 - 2 cm.
  3. Cut out circles from parchment a couple of centimeters more than the diameter of the neck of the can. Cover them with cranberries, and pour on top one at a time - two tablespoons of sugar.
  4. Close the blank with lids and put in a cool place to store.

With the addition of oranges

Cranberry berries have a small bitterness in taste, but desserts made of it with the addition of citrus fruits (lemons or oranges) do not have such a drawback.

To cook cranberries in sugar with oranges, you must prepare in advance:

  • 1000 g of cranberries;
  • 1000 g of granulated sugar;
  • 3 large oranges.

Cranberries in sugar at home with citrus are prepared as follows:

  1. With one orange, thinly remove the zest with a fine grater or knife for peeling potatoes. Squeeze a glass of juice from the oranges themselves. If the liquid is less than this volume, you can take another fruit or add water to the desired volume.
  2. Pour orange juice into a container with sugar and put on medium heat. With constant stirring, bring the mixture to complete dissolution of sugar, but in no case let the syrup boil.
  3. Transfer washed and dried cranberries and zest of one orange into syrup. Strain the composition for about 10 minutes, avoiding boiling, until the moment the berries begin to burst.
  4. Transfer cranberries into prepared sterile jars and store in a cool place, tightly closing the lids.

Cranberries, mashed with sugar

Berries wiped with sugar, which did not give in to heat treatment, are as useful as only picked ones. In this way, housewives prefer to cook currants, raspberries, lingonberries, mountain ash and other garden gifts.

To harvest cranberries in this way, you will need:

  • 1000 g of fresh or frozen cranberries;
  • 1000 g of white crystalline sugar.

The sequence of actions:

  1. Thoroughly rinse cranberries. This can be done either by “bathing” it in a large container, or by rinsing under running water, after being placed in a colander. Pure berries must be dried to prevent a drop of water from falling into dessert.If the cranberries are wet, then further storage in the bank may create favorable conditions for the development of microorganisms that provoke fermentation or mold. For the same reason, the container must be sterile and dry.
  2. Grind the prepared cranberries with a meat grinder or mash with mashed potato masher and cover with sugar. Mix.
  3. Ideally, cranberries in sugar should be left for several hours to dissolve the sweet crystals. But you can immediately put it in banks, close and put it into storage.

How to make in a blender

Small portions of cranberries in sugar are very convenient to cook with a blender. It can be both a bowl with knives, and an immersion device.

The proportions of the ingredients in this case for a small portion of the workpiece will be as follows:

  • 500 g of fresh cranberries;
  • 500 g of sugar.

Since it is not provided that a small portion of cranberries in sugar will be stored for a long time, the "lovers" of sweets can slightly reduce the amount of sugar.

Features of cooking in a blender:

  1. Prepare berries and containers for subsequent storage. Wash cranberries, sterilize jars. Dry raw materials and containers.
  2. If you grind everything with a submersible blender, then pour berries and sugar into a container of a suitable displacement. Mix everything and grind with a blender.
  3. If a bowl with knives is used, then the ingredients will be impeded into it and interrupted until uniform.
  4. Transfer the finished cranberries in sugar into prepared containers of a small volume.

This preparation is suitable for making berry tea or cranberry juice.

Option for storage in the freezer

It’s not always possible to find a place on a shelf in a refrigerator for a jar of cranberries in sugar, but a bag with a frozen product will fit perfectly in the freezer.

The proportions of cranberries with sugar for this storage method will be slightly different from the classic formulation:

  • 1500 g cranberries;
  • 250 g of sugar.

Algorithm of actions:

  1. Grind washed and dried berries with any available method (blender, meat grinder or potato masher), cover with sugar and mix until it is completely dissolved.
  2. Then fill the resulting mass with dense bags for freezing and close them. You can push grooves on the bag with a ruler, dividing the workpiece into portioned cubes, and send it to the freezer.

Sugar Cranberries with Syrup Glaze

  • 200 g of fresh berries;
  • 200 g of powdered sugar;
  • 120 ml of water;
  • 100 g of granulated sugar.

Cooking sequence:

  1. Send sugar with water to the fire and warm their mixture until absolutely all the sweet crystals disperse in the liquid.
  2. Wash the cranberries well, as in the previous recipes, and roll the slightly moist berries in icing sugar.
  3. Then dip the cranberries in syrup and mix so that each berry is completely covered with it. With a strainer, extract the fruits from the sweet mass and arrange them in one layer at a certain distance from each other.
  4. When the syrup on the berries dries a little, it remains only to crush them on top with icing sugar and mix for a more even distribution of the layer of glaze. Cranberries in sugar icing are ready.

To give the dessert a delicate vanilla flavor, you can mix powdered sugar with vanilla.
