Pies are a symbol of Russian cuisine. There are many recipes for delicious pastries that are passed down from generation to generation. One of these pies is a kurnik, the classic recipe of which the cooks call the top of culinary art in Russia. We will discover the secrets of preparing a complex, but very tasty and satisfying pie.

Classic recipe in the oven

Kurnik is a real festive baking, because you can master the preparation of such a dish only on weekends and in the presence of free time.

 

Components for the test:

  • two cups of white flour;
  • 155 ml sour cream;
  • 155 g butter;
  • one large egg;
  • a pinch of salt.

For filling:

  • two chicken breasts;
  • three potato tubers;
  • large onion;
  • a pair of butter cubes.

 

Cooking method:

  1. In a bowl we put all the ingredients for the dough, crush it with our hands until we get a plastic flour coma, which we then cover and leave to the side.
  2. We cut the breast into small cubes, three potatoes on a grater, chop the onion into quarters.
  3. We divide the flour base into two parts, with one half being larger than the other. Of the most part, we form a circle and put it in a shape, be sure to straighten the sides for the filling.
  4. The first layer is potatoes, which are sprinkled with salt, then chicken meat mixed with onions. We also season the meat layer with spices, spread several cubes of melted butter on top and cover with the second part of the base, which we also roll into a circle.
  5. We fasten the edges in the form of a pigtail or flagellum, make a small hole in the middle, grease the cake with whipped yolk and send the kurnik to the oven for 45-50 minutes (temperature 190 ° C).

With the addition of potatoes

Kurnik is a real culinary masterpiece, representing a multi-layer filling, divided by thin pancakes.We will tell you about how to cook a real kurnik, and now we will share a more modern version of a pie with chicken and potatoes.

Components for the test:

  • 255 ml of kefir;
  • pack of butter;
  • 655 g of flour;
  • 0.5 tsp. salt and soda.

For filling:

  • 366 g of bird fillet;
  • four potato tubers;
  • two small onions;
  • 35 g of oil, salt, pepper.

 

Cooking method:

  1. Pour kefir into a large bowl, pour soda and wait five minutes. As soon as bubbles appear on the surface of the drink, throw salt, pour in the melted butter and add the flour. Stir until the dough is soft to the touch.
  2. Cover the base and set to cool for a while, while preparing the filling.
  3. We cut the chicken and potatoes into small sticks, chop the onion finely.
  4. Mix the ingredients, seasoning them with salt and pepper.
  5. The basis is divided into larger and smaller parts. We roll each part into a circle.
  6. We shift the first circle (large) to the shape, make the sides.
  7. We spread the filling so that the chicken coop turns out to be juicy, lay the pieces of ghee on top of the filling, cover with the second round.
  8. In the center we make a small hole, grease the cake with a beaten egg and send it to the oven for 50 minutes (temperature 180 ° C).

Cooking in a slow cooker

Kurnik in a slow cooker is a simpler version of making a pie, but it also turns out delicious. In the classic recipe, raw potatoes are used, but in such a kitchen appliance high humidity, so we advise you to boil it first.

Components:

  • half a kilo of flour;
  • two chicken eggs;
  • Art. l sweet sand;
  • tsp soda;
  • 0.5 tsp salts;
  • half a glass of sour cream (mayonnaise);
  • the floor of the oil package (2/3 for the dough);
  • two tbsp. l very cold water;
  • 355 g of poultry breast;
  • three boiled potato tubers;
  • onion, spices.

 

Cooking method:

  1. We drive eggs into the container, put soft melted butter and two tablespoons of lean, pour sweet and salty granules, put sour cream and pour in ice water, mix.
  2. Then we send flour and soda to the liquid mass, knead the soft base, put it in a bag and put it in the cold for half an hour.
  3. Grind meat, potatoes and onions into small cubes, season with spices and mix directly with your hands.
  4. Divide the base, put the smaller one aside, and put the larger one in the appliance bowl, distribute so that the dough covers the bottom and the walls of the mold. Spread the filling, pieces of butter on top.
  5. We roll out the smaller part into a circle, cover the filling, fasten the edges and close the lid.
  6. You can bake a kurnik in the “Baking” mode (one hour) or according to the “Multipovar” program (temperature 125C, time - one hour).

Puff pastry

Today, a kurnik can be baked in different ways, each recipe has its own characteristics and secrets. The dough for the chicken coop can be any, as well as the filling itself. We offer a simple and unusual recipe for hearty pastries from puff pastry.

 

Components:

  • half a kilo of poultry meat;
  • 525 puff pastry (ready);
  • 225 g of rice;
  • bulb;
  • 225 g of champignons;
  • two raw eggs and one boiled;
  • 55 g melted butter;
  • a cup of kefir;
  • two tbsp. l flour;
  • dill, spices.

 

Cooking method:

  1. Boil poultry until tender in slightly salted water. Then cool and finely chop. We wash the rice grains and also pre-boil.
  2. Mix the sour-milk drink with eggs, pour in flour, salt and two tablespoons of sweetener. Fry thin pancakes (4 pancakes will be enough) for a minute on each side.
  3. Finely chop the boiled egg and dill, mix with salt and two tablespoons of soft oil.
  4. In ghee, fry chopped mushrooms, and onions for 15 minutes.
  5. We take two layers of puff pastry, cut a circle from each. We take the first preparation, put it in the form, now we lay the eggs, try not to go beyond the edges, sprinkle with boiled rice grains on top. We put two pancakes on the eggs and make a layer of mushrooms and again rice. We put two more pancakes, form a layer of meat and the remnants of rice and cover with a second circle of puff pastry.
  6. We fasten the edges, make a hole in the middle, coat the pie with an egg and send it to the oven for 35 minutes (temperature 180 ° C).

Pie according to the old Russian recipe

An old Russian recipe for a chicken coop is a multi-layer cake and several types of filling. You will have to tinker with such a treat, but it's worth it. Everyone will be delighted with such a pie. For the recipe you need to bake pancakes (recipe see above) about 7 pieces.

Components for the test:

  • 420 g of white flour;
  • 220 g whole grain flour;
  • one and a half glasses of milk;
  • one large egg;
  • 35 g of yeast (fresh);
  • 135 g melted butter;
  • Art. l Sahara;
  • tsp salt.

 

For buckwheat filling:

  • 110 g of buckwheat;
  • two boiled eggs;
  • 30 g butter;
  • dill, salt.

For mushroom toppings:

  • 320 g of forest mushrooms (frozen);
  • bulb;
  • a spoon of sour cream, spices.

For meat filling:

  • 320 chicken meat;
  • bulb;
  • Art. l flour and butter;
  • half onions and carrots;
  • 120 ml of chicken stock;
  • spice.

 

Cooking method:

  1. We heat the milk, breed yeast and sweet sand in it, leave for 15 minutes. Then we drive in the egg, add two kinds of flour and salt, knead the flour base, cover and leave for 40 minutes.
  2. Then we turn the base into a layer (thickness not more than one centimeter), grease with melted butter, fold the layer four times, put in a bag and put it in the refrigerator for 10 minutes. We perform this procedure three times.
  3. We bake pancakes according to the recipe we have proposed above or according to any of your cookbook.
  4. For meat filling, boil the chicken along with onions and carrots. Finished meat is cut into small pieces, the broth is not poured.
  5. In melted butter, fry the flour until golden, dilute it with broth and simmer the sauce until thickened. Half the sauce is mixed with meat, while the second is left.
  6. Now boil the buckwheat. To make the groats friable, 2.5 parts of water should be taken for one part of buckwheat. At the end of cooking, put ghee. Once the cereal has cooled, mix it with finely chopped eggs, dill and the sauce left.
  7. Remained mushroom filling. Here we just chop the mushrooms and onions, fry, put sour cream at the end, simmer for five minutes and turn it off.
  8. From the dough you need to make two circles with a thickness of 7 mm and a diameter of 2 cm larger than the circumference of the pancakes. We make one more circle, it will be the bottom, transfer it immediately to the baking sheet covered with parchment.
  9. Put the pancake on the dough, distribute the buckwheat filling, the pancake again, now the meat filling, the pancake again and at the end the mushroom composition. Repeat the layers, cover the last with dough, fasten the edges in the form of a pigtail.
    Lubricate the chicken with an egg and bake for 40 minutes (temperature 180 ° C). Grease the hot cake with ghee.

From pancakes with chicken and mushrooms

In the old days in Russia, some dishes were prepared only once a year. One of these dishes is a henhouse, which was baked on a birthday, wedding or Shrovetide. The ingredients and method of making dough and pancakes can be seen above.

Components for the filling:

  • half a kilo of meat and mushrooms;
  • half a cup of rice grains;
  • two onions;
  • three eggs;
  • Art. l ghee;
  • parsley, dill, spices.

Cooking method:

  1. Knead the yeast dough, bake pancakes.
  2. Boil rice grains and eggs until tender, then chop them and mix with chopped herbs, adding a spoonful of sour cream.
  3. Grind mushrooms and onions, fry and the second filling is ready.
  4. Boil poultry meat by adding a few peas of pepper and a bay leaf to the aroma broth. Cool the finished meat and grind it.
  5. We collect the pie in layers, grease with an egg and bake for 35 minutes (temperature 200 ° C).

Quick lazy chicken

The classic recipe for a chicken coop is quite laborious, but there are known options that will allow you to quickly bake a delicious pie. For the filling, take chicken, you can breast, and it is better to take the hips, the baking will be more juicy.

Components for the test:

  • four tbsp. spoons of sour cream and mayonnaise;
  • a cup of flour;
  • two raw eggs;
  • 0.5 tsp soda, salt.

For filling:

  • half a kilo of potatoes;
  • three chicken thighs;
  • spice.

Cooking method:

  1. For the filling, cut the potatoes into circles, onions in half rings. Separate the meat from chicken thighs, cut into small pieces, season with spices.
  2. For the test, mix all the ingredients until a creamy mass is obtained.
  3. We take the form, pour out part of the base, lay out the filling in layers: first, potatoes, then onions and meat.

From shortcrust pastry

Kurnik can be baked on the basis of shortcrust pastry. Baking is delicious and crispy. For the recipe you need to bake pancakes (6 pieces) and prepare the filling - mushroom, from rice and chicken meat (recipe see above).

Components for shortcrust pastry:

  • 425 g of flour;
  • 125 g margarine;
  • 55 ml of milk;
  • a pinch of ripper;
  • three tbsp. l sour cream (mayonnaise).

Cooking method:

  1. We have already talked about how to prepare fillings for the chicken coop, so we proceed immediately to the test. In a container, put soft margarine, drive in eggs, add sour cream and pour in milk.
  2. Combine the liquid mass with flour and a cultivator, knead the shortcrust pastry and send it to cool for half an hour.
  3. As soon as the filling is ready and pancakes, you can collect the henhouse. We spread the ingredients in layers, alternating pancakes with fillings. The bottom and top are the dough.
  4. Bake the cake for about an hour (temperature 180 ° C).
