Passionate, tender, airy, French, affectionate ... That could be a kiss. The Kisses cookies are just as many-sided - cottage cheese, with yeast, with mayonnaise, puff pastry, meringue ...

Classic Kiss Cookies from Cottage Cheese

Ready-made cookies "Kisses" in its finished form resembles plump lips folded with a bow. The baking tastes friable and very tender, like a kiss from a loved one. For such a dessert you need to take:

  • 200 g of cottage cheese;
  • 75 g of soft butter;
  • 160 g of flour;
  • 5 g of soda, slaked vinegar or lemon juice;
  • sugar for powder.

Step-by-step baking:

  1. To achieve maximum tenderness, it is necessary that no curd lumps remain in the dough, so it is better to wipe the dairy product through a sieve.
  2. Put creamy butter in a container with prepared cottage cheese, knead everything thoroughly with a fork or pusher for potatoes. Add slaked soda, sift the flour on top.
  3. Mix everything and collect the dough in a lump. To make it easier to work with the mass, cover it with a damp towel and put it in the refrigerator for half an hour.
  4. Roll out the dough stabilized in the cold into a layer of 3-5 mm on a table dusted with flour and cut out mugs from it with a thin-walled glass. Sprinkle each round billet with sugar on top and fold in half, again sugar and fold.
  5. Sprinkle the mugs folded four times on top with sugar crystals and lay on an oiled baking sheet. Bake “Kisses” at 180 degrees to a delicate golden color.

How to cook with yeast

Live yeast in shortbread cookies add more airiness and tenderness to the products, and a large amount of fat makes the dough soft and supple for working with it.The composition of the sand dough with the addition of yeast includes:

  • 200 g margarine or butter;
  • 100 g fatty mayonnaise;
  • 1 large chicken egg;
  • 7 g dry instant yeast;
  • 300 g flour;
  • sugar to sprinkle cookies during molding.

The sequence of actions:

  1. Melt margarine in a microwave or gas, let it cool to a temperature that will not be harmful to yeast, and mix with mayonnaise.
  2. Dissolve the yeast in the mayonnaise-margarine mixture and leave for five minutes to activate them. Then add flour and knead plastic dough.
  3. To form products similarly to “Kissers” with cottage cheese, sprinkling each circle with sugar. The baking heat treatment conditions are the same as in the previous recipe.
  4. Instead of sugar, when forming cookies, you can grease the circles on the folds with thick jam, boiled condensed milk or chocolate ganache. It will turn out just as appetizing.

With mayonnaise

This cookie dough is well known to the hostesses, who are the lucky owners of old Soviet syringes to form curly shapes, since such a recipe came with the device.

And let it not be fashionable now to cook on mayonnaise, and not everyone has such a culinary syringe, but if you bake a tender “Kisses” on mayonnaise, they will become a favorite treat of adults and children. For the test you will need:

  • 1 egg
  • 180 g of sugar;
  • 200 g of Provence mayonnaise;
  • 200 g butter at room temperature;
  • 10 g vanilla sugar;
  • 3.5 g of salt;
  • 7 g of baking powder or baking powder;
  • 300 g of flour.

Baking Algorithm:

  1. Crush the flour with the baking powder and set the resulting loose mixture aside. Combine the remaining ingredients in a vessel of suitable displacement and beat until smooth.
  2. Mix the loose and liquid components of the dough until a smooth mass is obtained, which is then transferred to a pastry bag with a curly nozzle. Set products on a greased baking sheet at a respectful distance from each other (1-3 cm)
  3. To prevent the baking from spreading out on the sheet, you can hold it directly on the sheet a little in the refrigerator, but in any case put it in a well-heated oven (200-220 degrees). A delicate golden hue of baking is a signal of its readiness.

"Kisses" without cottage cheese

Adding semolina to bulk dough will not surprise anyone. The recipe for Mannica in its various variations is known to almost every novice hostess. But this ingredient can also be found in tender Kisses:

  • 130 g semolina;
  • 100 g of granulated sugar;
  • 1 egg
  • 80 g of butter;
  • 30-50 g sour cream;
  • 2.5 g of vanillin;
  • 10 g of baking powder;
  • 130 g of flour;
  • sugar or thick jam for molding.

Working process:

  1. Mix flour with semolina, sugar and baking powder. Add soft butter to this mixture, knead it thoroughly, then beat in an egg and stir.
  2. Last in the dough, add sour cream. It needs just enough so that the dough is gathered in a bun. For 20 minutes send the dough into the cold to stabilize.
  3. You can form cookies, as in the classic recipe for the curd "Kisses" or roll a sausage from the dough, which is divided into 20-24 pieces. Roll each piece of dough into a ball, which is laid on a greased baking sheet, pressing a depression in the center with a finger, pour jam into the depression.
  4. Until ready, the products should be browned in the oven for 15 minutes at a temperature of 200 ° C.

From puff pastry

Ready puff pastry can also be used for baking homemade cookies, taking the classic recipe as the basis for the formation of products. But if the dough does not need to be prepared (it is easier to buy in the store), then why not make a little effort to make Kisses more interesting and tastier. For the original cookies from the finished puff pastry, you must prepare:

  • 400 g of ready yeast puff pastry;
  • 2 squirrels;
  • 1 yolk;
  • 150 g nuts of any (taste) nuts;
  • 150 g of sugar;
  • 8 g of vanilla sugar.

Bakery products:

  1. At high speeds, whisk the mixer to beat the squirrels, gradually adding both types of sugar, into a beautiful glossy lush and stable mass.
  2. Fry nuts lightly in a pan and a little detail. Then carefully mix them into the protein mass so that it does not fall.
  3. Roll out the puff pastry into a thin (2-3 mm) cake, from which cut circles with a diameter of 10 cm. Put a teaspoon of a nut-and-nut filling in the center of each circle, pinch the edges a little, as on dumplings.
  4. Transfer cookies to a prepared baking sheet, grease them with beaten yolk and bake at 190 degrees to a delicious golden crust (15-20 minutes).

Meringue Recipe

The word "meringue" is translated from French as a kiss, so it is not surprising that there is a recipe for "Kisses" based on meringue. They can be bright multi-colored when adding dyes to proteins or with a delicate chocolate finish, as in this recipe:

  • 2 squirrels;
  • 2 g of salt;
  • 100 g of powdered sugar;
  • 30 g of cocoa powder;
  • 50 g of dark chocolate.

How to make homemade cookies:

  1. In a clean and low-fat lemon juice bowl, beat the squirrels with a pinch of salt until soft peaks, then pour the powder in small portions, beat the mass to a glossy shine. Its density should be such that when turning the bowl, it does not fall out of it.
  2. Grate the chocolate on the finest grater. Sift cocoa through a strainer onto whipped proteins, add grated chocolate and mix gently with movements from the bottom up.
  3. Using a pastry bag or two teaspoons, place round cakes on a baking sheet covered with parchment. Bake the meringues for 18-20 minutes at 150 degrees so that they become crispy on the outside, but soft inside.
  4. If desired, the airy chocolate clouds can be glued in pairs with melted chocolate, jam, boiled condensed milk or thick cream.
