Each housewife has a gingerbread recipe. But we managed to collect the most common and delicious homemade options for kneading gingerbread dough. Nuts, chocolate, jam, seasonings for baking and not only are added to it.

The basics of making gingerbread at home

The main ingredients of traditional gingerbread: wheat flour, natural honey and chicken eggs. Depending on the amount of sugar and honey used, the dough for gingerbread is honey, sugar and honey-sugar.

Cooking a classic dough

There are two main recipes for making gingerbread dough.

Cooking the dough in the raw way:

  1. Combine honey with butter and beaten eggs. Mix.
  2. Mix flour with spices, baking soda and make a very thick dough.

Choux pastry cooks a little longer:

  1. In a saucepan mix sugar, honey, a little water and warm the resulting composition. The heating temperature should not be higher than 70 degrees.
  2. Then add a few tablespoons of sifted flour and grind, stirring with a wooden spatula.
  3. The eggs and the rest of the flour are added to the chilled mixture. Knead the dough.

Products from such a dough should be cut immediately, otherwise it may “drag out” and the gingerbread cookies will not work.

From raw dough, gingerbread desserts are stored for a short time and quickly harden. Unlike custard cakes, whose freshness lasts longer.

Gingerbread Cooking Options

Gingerbread icing is not difficult to prepare.

For example, to make chocolate, the following steps are taken:

  1. One hundred grams of chocolate bar is broken into cubes, which dissolve over low heat.
  2. The resulting mass is diluted with three tablespoons of boiling water.
  3. When the chocolate is evenly dispersed, a bar of butter, half a glass of sweet powder and, if desired, a little black pepper are introduced.
  4. Thoroughly mix the composition until smooth.
  5. Gingerbread products are doused with finished glaze immediately before it has frozen.

You can also prepare and cover the gingerbread with the classic sugar glaze known to every child:

  1. A pound of sugar is poured with water (500 - 700 ml).
  2. The composition is simmered on fire until thickened, removing the resulting foam.
  3. If desired, the glaze can be colored by adding cocoa or food coloring to the still hot syrup.

Fans of rum fudge are invited to fulfill this homemade recipe for this glaze:

  1. 150 grams of icing sugar is poured with two tablespoons of boiling water, to which two tablespoons of rum are added.
  2. Beat the mass until thick.
  3. Cool confectionery is doused with the resulting glaze.

Only ready-made chilled gingerbreads are made out with such fondant, and in order to dry it faster, put dessert for several minutes in the oven.

Before removing the foam from the sugar coating, dip a slotted spoon in water. So the foam sticks better, and the glaze remains unaffected.

Gingerbread cookies

Ingredients:

  • flour (wheat) - 300 grams;
  • butter - 55 grams;
  • ginger powder - 40 grams;
  • soda (tea);
  • chicken egg;
  • icing sugar - half a glass;
  • cloves, ground cinnamon;
  • black coffee.

Cooking method:

  1. The flour is sieved, and then mixed with ginger powder and soda on the tip of a knife. Add spices to the flavor of the product.
  2. Eggs, as usual, beat with sweet sand and combine with melted butter.
  3. Chilled natural black coffee is combined with a whipped mass.
  4. Pour the flour mixture and knead the dough.
  5. The thick layers are rolled out of it and gingerbread figures are cut into them.
  6. Bake preforms in a baking dish or on a baking sheet.
  7. Glazed chilled products.

Recipe for March 8

Ingredients:

  • two chicken yolks;
  • a glass of fragrant honey;
  • rye flour rye - 250 grams;
  • wheat - twice as much;
  • granulated sugar - half a glass;
  • ground cinnamon and cloves - at the tip of a tsp;
  • one teaspoon of slaked soda.

Cooking method:

  1. Sugar is poured into a deep bowl, put honey to it and put the composition on heating until syrup is obtained.
  2. Add cinnamon and cloves, mix, let cool.
  3. Two types of flour are combined in a separate bowl and added to the soda, having previously extinguished it.
  4. Whisk the yolks slightly with a whisk and combine with the flour mixture.
  5. Add fragrant sweet syrup and knead the dough.
  6. Gingerbread cookies are formed on March 8, of course, in the form of a figure eight.
  7. Lay the blanks on baking sheets and put in the oven to the middle level.

Chocolate treat

Ingredients:

  • 0.25 kilograms of flour;
  • four chicken eggs;
  • half a glass of granulated sugar;
  • 3 - 4 tbsp. tablespoons of cocoa powder;
  • almond crumbs - 100 grams.

Cooking method:

  1. Eggs are driven into tall dishes, granulated sugar and cocoa powder are poured. Beat the composition with a blender to a uniform consistency.
  2. Combine it with flour and lightly fried almond crumbs.
  3. Interfere with the dough with your hands, you can beat it on the table. Then form layers with a height of not more than a centimeter.
  4. Gingerbread cookies are formed using confectionery tools and baked in an oven at medium temperature. Remove hot.

After cooling from above, finished products are doused with glaze.

Quick gingerbread cookies on kefir

Ingredients:

  • flower honey - 165 grams;
  • granulated sugar - 65 grams;
  • common salt;
  • cream margarine - 70 grams;
  • half a glass of kefir;
  • flour - three glasses;
  • gingerbread seasoning;
  • one large egg;
  • sweet water.

Cooking method:

  1. Sugar, a pinch of salt and margarine are placed in a bowl with honey.
  2. The composition is heated, removed from the stove and allowed to cool.
  3. Add kefir, gingerbread seasonings and egg.
  4. First, a wooden spoon, and then hands thoroughly knead a homogeneous dough.
  5. Roll it out, sprinkle it with sweet water and make curly gingerbread cookies, which immediately bake on baking sheets.

The cooled products are glazed or sprinkled with powdered sugar through a strainer.

How to cook on cucumber pickle

Ingredients:

  • half a kilogram of premium flour;
  • one and a half liters of cucumber pickle;
  • half a glass of granulated sugar;
  • honey (flower) - 10 tbsp. spoons;
  • fat - 50 grams;
  • baking powder for the dough;
  • ground spicy seasonings.

Cooking method:

  1. Baking powder is added to the sifted flour.
  2. Honey is mixed with a wooden stick, combining with granulated sugar and fat (margarine or butter). The resulting composition is melted.
  3. Pour cucumber pickle into it, drive in an egg, sprinkle with spices and knead the dough with your hands.
  4. Form a large gingerbread and bake it on a heat-resistant greased baking sheet.

Honey treat

Ingredients:

  • a pound of flour;
  • an egg (C1);
  • cream margarine - half a pack;
  • half a glass of fragrant honey;
  • baking soda - on the tip of a knife;
  • spices (cinnamon, cloves, nutmeg and others to taste) - half a teaspoon;
  • a glass of water.

Cooking method:

  1. Honey is mixed with creamy margarine in a small saucepan, which is put on gas. Water is added to it and the composition is heated, not bringing to a boil. Pour a little flour, spices and stir.
  2. The beaten egg mixture is added to the cooled mass.
  3. Soda is quenched with acetic acid and added to the rest of the ingredients. Gradually pour flour to them and knead the dough.
  4. Roll out a pancake and cut gingerbread cookies with molds.
  5. Lay products on an oiled baking sheet and bake no more than 15 minutes.
  6. Previously, you can grease the workpiece with a slightly beaten egg.

Ingredients:

  • wheat flour - 0.4 kg;
  • granulated sugar - a glass;
  • oil - half a pack;
  • two eggs;
  • drinking soda - half a teaspoon;
  • candied fruits are small - 0.2 kg;
  • raisins - 150 grams;
  • food confetti.

Cooking method:

  1. Sugar is ground with proteins and yolks, mixed with oil and soda.
  2. Then gradually add finely chopped candied fruits and raisins.
  3. Give the dough to lie down a little, and then roll out with a rolling pin
  4. Using a cardboard stencil or a special form, heart-shaped blanks are cut.
  5. Lay the products on a baking dish and bake no more than 20 minutes. Ready “romantic” gingerbread cookies are sprinkled with colored confetti.

If the flour in hot syrup is not stirred quickly, lumps will appear, which then can no longer be ground. It is recommended that baking soda be replaced with ammonium (carbon dioxide), but it is better to use them in equal proportions.

New Year's treat

Ingredients:

  • wheat flour - 0.5 kilograms;
  • honey (preferably forbs);
  • cocoa - 60 grams;
  • half a packet of butter;
  • two eggs (C1);
  • 2 grams of tea soda;
  • vanilla, cinnamon.

Cooking method:

  1. The yolks are separated from the proteins, combined with honey and spices, pour cocoa powder and mix well.
  2. It was the turn of the proteins. They are pre-cooled, whipped and combined with the rest of the ingredients.
  3. Gradually introduce flour and soda, knead the dough and roll it thinner.
  4. New Year figures are cut out from a flat base and smeared with their yolks.
  5. A quarter-hour bakery is baked on an average oven level.

Based on sour cream

Ingredients:

  • milk - 0.3 l;
  • a glass of sour cream of medium density;
  • honey - as much;
  • flour (wheat) - half a kilogram;
  • sugar - 10 grams;
  • yolks - 2 - 3 pcs.;
  • cinnamon (ground) - one teaspoon;
  • baking soda - on the tip of a knife.

Cooking method:

  1. Sugar is poured into a frying pan and burned over low heat.
  2. Flour is combined with cinnamon and soda, extinguished with acetic acid.
  3. Honey is put in the burnt sugar and milk is poured (3.2% fat). Thin sour cream and yolks are also added here.
  4. Stir the resulting composition and gradually pour flour.
  5. Rolled flat pancakes from the dough are baked one at a time.
  6. Gingerbread cookies of any shape are cut with a pastry knife or pizza knife and baked for a quarter of an hour in a hot oven.

From above, you can grate powdered sugar on the finished baking or pour it with icing.

Traditional Tula gingerbread cookies

Ingredients:

  • premium white flour - 400 grams;
  • two chicken yolks;
  • honey - 60 - 80 grams;
  • sugar - a glass;
  • 100 ml of milk (2.5%);
  • tea soda;
  • jam (preferably apple) - for the filling.

Cooking method:

  1. Egg yolks are gradually mixed with granulated sugar and heated honey, slightly beat the resulting composition and pour warm milk into it.
  2. Slowly add the sifted flour, knead the dough well and let it lie for about two hours.
  3. After this time, roll out the dough with a rolling pin into two pancakes.
  4. Spread the first on a greased baking dish, cover it with thick jam, which is immediately hidden under the second pancake.
  5. Pinch the edges of the future gingerbread and bake it in the oven at 170 degrees.

Lenten Recipe

Ingredients:

  • sugar - two to three tbsp. spoons;
  • liquid honey - half a cup;
  • oil (vegetable, not PTO);
  • soda or other baking powder - on the tip of a knife;
  • wheat flour - a quarter kilogram;
  • water - half a glass;
  • a quarter of lemon.

Cooking method:

  1. In a deep saucepan, sugar is diluted with water, honey is added to it and the resulting composition is simmered over a fire until the ingredients are dissolved. It turns out syrup.
  2. To it add half a glass of sifted flour, knead the dough and cool.
  3. The remaining flour is mixed with the selected baking powder and combined with the dough. By preference, you can add lemon zest to the composition.
  4. Roll out a thick layer from the resulting mass and form lean gingerbread cookies. To do this, use special molds or a pastry knife.
  5. Distribute the blanks on a baking sheet and set to bake.

With peppermint tincture

Ingredients:

  • butter - half packs;
  • half a glass of sour cream;
  • two chicken eggs (C1);
  • granulated sugar - half a glass;
  • premium flour - 250 grams;
  • teaspoon of soda;
  • half a cup of mint tincture;
  • cloves;
  • orange peel;
  • jam.

Cooking method:

  1. Mint syrup is heated, powder spices are added to it and the resulting composition is allowed to cool at room temperature.
  2. Eggs, as usual, are ground with sugar. You can beat them a little in a blender. The foamed mass is added to the syrup.
  3. Sour cream is put here, flour and tea soda are introduced. Knead the dough.
  4. A rolled base plate is covered with a greased baking sheet or baking dish and browned in the oven for about half an hour.
  5. Chilled gingerbread is cut so that two crusts are obtained, which are immediately greased with jam.
  6. Shapes of various shapes.

Gingerbread cookies

Ingredients:

  • two glasses of wheat flour;
  • a glass of fragrant honey;
  • half a glass of granulated sugar;
  • a pair of eggs;
  • butter - 30 grams;
  • walnut - a handful of kernels;
