Many people like baked meat dishes, but traditional recipes are boring and I want to try something new. Kebab from duck - and will be a worthy solution to this problem.

Since duck meat is fat, it’s worthwhile to put a refractory container when baking on the bottom of the oven so that the juice drips there.

How to marinate in mayonnaise

The recipe has a tempting sauce that gives the meat a refined touch of taste.

A dish of domestic duck is prepared on the basis of:

  • 800 g of ducklings;
  • 1/3 lemon
  • 3 cloves of garlic;
  • 4 onions;
  • 2 tbsp. l soy sauce;
  • 2 tbsp. l mayonnaise;
  • 1 tsp Sahara;
  • spices to taste.

 

Stages of cooking:

  1. Pass the garlic through a press and mix with soy sauce, add the squeezed lemon juice here. Into the contents we introduce mayonnaise, salt, pepper and mix thoroughly.
  2. We chop the peeled onion rings and pour into the lemon mixture.
  3. We wash the duck, dry it and cut into portions, which we add to the previously prepared marinade.Knead the mass with your hands so that the sauce covers each piece. We put the meat in the refrigerator for 5 hours.
  4. We take out the pickled duck after time and string it on skewers along with the onion. We put the meat on the grate in the oven. Bake kebab for 60 minutes at a temperature of 180 degrees.

Baking time may vary, it all depends on the age of the bird, it is recommended to purchase game younger.

Cooking a whole carcass on the grill

Fans of picnics in nature will do this recipe. Kebab from wild duck turns juicy, fragrant and very satisfying.

To work, you will need:

  • duck carcass (weighing 1 kg);
  • 0.5 tbsp. honey;
  • 2 tbsp. l soy sauce;
  • 1 lemon
  • 2 apples
  • 2 oranges;
  • 2 tbsp. white wine;
  • spice.

Cooking specifics:

  1. We wash the duck, remove the offal, rub it inside and out with spices. We put it in a deep bowl, pour wine and put it in a cool place to marinate for the night.
  2. Before baking on the grill, we begin the game with chopped slices of apples and oranges.
  3. In the stewpan we introduce soy sauce, zest and lemon juice, honey. We cook the mass 10 minutes before thickening.
  4. We put the duck on a skewer and pour half the cooked sauce. We fix the game on the grill, fry on smoldering coals for about an hour. In the process of baking, pour the meat with the remaining sauce.

Ready-made game acquires a beautiful caramel crust, and a wonderful aroma extends to several meters.

Juicy skewers of domestic duck

If you want aromatic and tasty fried meat at the stake, then barbecue must be marinated in advance. Duck is better infused with sauce if left in the marinade for 8 hours.

Game is prepared from the following components:

  • ducks (weighing 1.5 kg);
  • 1 tsp Paprika
  • 2 tsp mustard powder;
  • 1 large lemon;
  • a pinch of salt;
  • 2 onions;
  • 100 g butter.

 

Step-by-step execution:

  1. For marinade, squeeze lemon juice and mix with softened butter, add mustard powder and salt. Knead the mass.
  2. We remove the inside of the duck, wash my carcass and dry it. It is not necessary to separate the poultry meat from the bones, an excellent kebab will turn out this way, if cut into pieces across the fibers.
  3. Peeled onions in large rings.
  4. In a deep container we combine meat, marinade and onions. Gently mix the contents with your hands and set aside in a cold place to insist on a night.

In cooking this dish, the main thing is to properly prepare the barbecue. At the bottom of the frypot, the cook recommends sprinkling some sand. Then the dripping fat from the bird will not ignite.

The recipe uses the ingredients:

  • vacuum-packed duck breast;
  • 1 tsp with salt on top;
  • a pinch of black pepper;
  • 100 ml coconut cream;
  • a pineapple;
  • a glass of cognac;
  • 10 g of cinnamon;
  • 10 g of cloves;
  • 1 tsp Sahara.

Cooking kebab from Stalik Khankishiev:

  1. We take the breasts out of the package and put them together with the juice of the bird in a dish for pickling. Using a knife, we cut the skin by 4 mm without touching the meat. Cut the breast into two parts. Pour cognac into the dish, pour pepper, salt. Rub the duck pieces with spices and let stand for 40 minutes.
  2. Cooking pineapple sauce. In a mortar, grind cloves, pepper, cinnamon. Pour sugar into the spices and pour the cream. Knead the mass until smooth.
  3. Cut the pineapple into slices, soak in the sauce and string on skewers. We chop meat on another metal rod.
  4. We put the skewers on the brazier, first the breasts go, then the pineapples. We begin to fry, in the process of cooking, put the remaining sauce on the fruit. We check the readiness of the meat with a match, if blood is not pierced, then remove from the grill.

In the process of frying the skewers of skewers with breast, you need to rotate less often, but with pineapples more often.

The most delicious poultry fillet dish in wine

The most delicious duck meat marinade is prepared using alcohol.

The following components are needed:

  • 1 kg of duck fillet;

  • lemon;
  • 2 tomatoes;
  • 2 onions;
  • a bunch of cilantro and basil;
  • kiwi;
  • 2 tbsp. l refined oil.

 

We perform the following actions:

  1. Wash the flesh of the bird, remove excess moisture with paper towels. Cut the meat into pieces and put in a deep container.
  2. Pass through the meat grinder the peeled onion and kiwi, washed tomato. Squeeze the juice of the lemon into the resulting mass, pour in the oil, pour the dry seasoning. Finely chop the greens and add to the mixture. Mix the sauce, but do not salt.
  3. We introduce the marinade into the meat, mix the components with our hands and leave for 3 hours at room temperature.
  4. Pickled pieces of meat string on skewers. Bake in the oven for 15 minutes at a temperature of 200 C.

Kebab from duck is not as popular as from chicken or turkey. Duck meat is drier, but if it is properly marinated, the result will be a delicious and delicate dish.
