To prepare chocolate cupcakes for the future (we often call them muffins) is an ungrateful task. This delicious dessert disappears from the table almost instantly.

Classic recipe

There are already plenty of recipes for such a dessert. But traditional chocolate muffins, from the basic list of products, are still loved by many.

You will need:

  • flour and granulated sugar - take 150 g of one and the second;
  • eggs - 2 pieces;
  • butter (pre-extracted from the refrigerator and warmed to room temperature) - 70 g;
  • chocolate (you need dark) - at least 100 g;
  • baking powder for dough and soda - ½ teaspoon of each component;
  • milk - not less than 200 ml;
  • vanilla extract - a teaspoon;
  • salt.

Pour all loose products (with the exception of vanilla) into one bowl, sift, mix gently.

We turn sugar and soft cow butter with a mixer into a lush, light mass. In the butter-sugar mixture add eggs (only yolks), chocolate (melted before that in a water bath). We mix the products until a homogeneous beautiful substance comes out.

Pour ½ flour mixture into it and pour half the norm of milk. Mix again. We wait half a minute and enter the remainder. Again we interfere. In almost finished dough, add egg whites after lightly beat them with a wooden spatula. We do this carefully so that the dough does not lose air. It turns out to be moderately liquid.

It remains to grease the molds with oil and fill them with dough. By 2/3, because of the heat, the dough will begin to "grow." About 20 minutes in an oven heated to 175 ° C, and cupcakes can be decorated and tasted.

With liquid chocolate filling

This treat resembles small tender lumps of joy.

Muffins are made from:

  • eggs - 3 pieces;
  • natural cow oil - 100 g;
  • chocolate (ideally black) - not less than 200 g;
  • granulated sugar - enough 50 g;
  • flour - 60 g;
  • salt - ¼ teaspoon.

Oil is not necessary to get out of the refrigerator in advance. All the same, he (cut into pieces) is waiting for a water bath along with broken chocolate. When the components "float", mix the chocolate-butter mass to leave a beautiful uniform shade, and let cool.

Turn on the mixer and process the eggs with sugar until we get foam. And already into it carefully, so as not to "blow off", we introduce the resulting mixture. And also add salt and flour. We get the dough.

Pour it into oiled tins and put it in the oven, heated to 200 ° C. Cupcakes with chocolate filling should stay there no longer than 10 minutes.

Cooking on kefir

If you include kefir in the list of products, then the cupcakes will turn out to be as luxurious and soft as they are in England.

What do you need for baking?

  • Natural cow oil (soft) - 100 g;
  • granulated sugar - 0.75 cups;
  • eggs - 2 pieces;
  • kefir - not less than ½ cup;
  • flour - one and a half glasses;
  • chocolate (black is more suitable) - 50 g;
  • cocoa powder - 3 tablespoons is enough;
  • soda - ½ teaspoon;
  • salt is a pinch.

Beat butter with sugar. We feel sorry for the hands and use the mixer.

Without turning off the device, add the eggs to the butter-sugar mixture one at a time. They are followed by kefir and soda powder. Knead all this, but now use a spoon.

Next in line is flour (we had sifted it together with cocoa), salt, pieces of chocolate. After diligently kneading the dough comes out.

We distribute it according to the molds and remove it in an oven heated to 180 ° С. When, after checking (piercing the central cake), the wooden skewer remains dry, the dessert must be pulled out.

There is one incredible recipe with a sponge cake structure and a banana flavor. Cooking on it is quick and easy. And it turns out very tasty. However, cupcakes cannot be different. Will we try?

 

Pour cocoa powder, flour, baking soda and granulated sugar in a single bowl in a bowl and sift. Then we mix it all.

Melt natural butter. Cut the banana into thin circles. Add these products to the bulk mixture. By the way, the use of vegetable oil is also acceptable (odorless). But with the cow component it comes out better.

There are eggs. And then a mixer comes into action, turning the components into a thick, uniform dough in which a banana is not visible.

Bakeware can be prepared in two ways:

  • milk and granulated sugar - enough for ¾ cup of the first and second;
  • eggs - at least 3, large;
  • baking powder - not less than a teaspoon;
  • vegetable oil (refined) - ¼ cup;
  • salt is a small pinch.

Cocoa powder is mixed with ½ cup flour. Sift the dry mixture into a bowl. Then we pass through the sieve the rest of the flour in the company with the baking powder. It remains to mix all the loose components. To get it right, let's do it with a whisk.

In another container we get light foam from eggs, sugar and salt. We use a mixer: the taste and tenderness of the products depend on how well the eggs are beaten.

Pour milk into a glass, add vegetable oil to the top. We send butter and milk liquid to the loose “company”, and it also contains sugar and egg mass.

The last step is another mixing. Better to produce it with a whisk. But it is also possible with a mixer turned on at the lowest power. Anyway more than 30 seconds, the manipulation should not lastso that the dough does not lose airiness.

By baking in the oven (at 180 ° C), you can do this in a slow cooker. 30-40 minutes will be enough.

With chocolate chips

The list of ingredients includes margarine. With it, the dough for cupcakes with chocolate chips will rise and bake better than in butter.

For dessert you will need:

  • margarine - 150 g;
  • granulated sugar - 100 g;
  • cognac - not less than a tablespoon;
  • vanilla - 10 g;
  • flour - enough 200 g;
  • chocolate, naturally, black - 100 g;
  • eggs - a pair of pieces;
  • baking powder.

Beat margarine with sugar using a mixer. Pour cognac into the sugar-margarine mass. Need to beat again.

Then comes the turn of the eggs. We drive them into the cognac mixture until the sugar is completely dissolved. Sift the flour and baking powder into the resulting mass and do not turn off the mixer, translating it into low revs. It should be a dough.

What do you need?

  • Chocolate (chopped, black) - take 350 g;
  • cocoa powder - 40 g;
  • coffee (strong, hot and black) - at least 180 ml;
  • butter, not cold - not less than 60 g;
  • granulated sugar - 190 g;
  • eggs - a pair of pieces;
  • flour - a little less than 100 g;
  • baking powder for dough - ½ teaspoon;
  • salt - a pinch;
  • fatter cream - 250 g;
  • pitted cherries (frozen or in own juice) - 150 g, including juice;
  • starch, lemon juice - ½ tablespoon of one and the other;
  • gelatin - ½ teaspoon.

On the eve we prepare a cream of cream and chocolate. To melted chocolate (2/3 of the norm) add slightly heated cream. Mix through a whisk until a homogeneous chocolate-creamy mass of a pleasant shade is obtained. She must stand in the refrigerator for at least 8 hours.

Cherries must also be taken care of in advance. Cook over low heat cherries, starch, lemon juice and sugar. When all this thickens and the sugar disappears from view, you can remove it from the stove. Then add gelatin swollen in cold water. Once it has completely melted and the mixture has cooled, we send it to the refrigerator.

For chocolate cupcake dough, melt the remaining chocolate in hot coffee and dissolve the cocoa powder. In a separate container we connect bulk products. Sugar is excluded - it is ground in another bowl with butter, using a mixer. We break eggs one by one into the sugar-egg mass without turning off the device.

Now you need to send coffee and chocolate liquid and flour there and knead the dough.

We fill them with deep molds almost to the top (those in which muffins are baked) are suitable. We remove for 15 minutes in the oven, fried up to 180 ° С. Ready cupcakes are still covered with hot cherry filling, and then creamy chocolate cream.

Chocolate Dough with Cheese Cream

For such a dessert, the recipe for any chocolate dough is suitable. For example, described in the previous recipe. Instead of cherries and cream, you can pour the Cheese cream on the cupcakes.

Prepare it from:

  • cream, at least 33% fat - half a liter;
  • cottage cheese - 300 g;
  • icing sugar - 100 g;
  • chocolate, as usual, black - 200 g.

It is important to follow the instructions with accuracy, literally to a gram. Only in this case the cream will turn out to be a real “Cheese” - not too sugary and well-kept in shape.

Take out standing cream for 8 hours in the refrigerator. Pour 50 grams of cream into a separate bowl. Beat them with a mixer, first at medium, then at maximum speed. The process should last at least 8 minutes.

Add the icing sugar without turning off the appliance. Then add cottage cheese to the creamy sugar mixture and mix again.

Boil the rest of the cream and add chocolate to them. To make the melting process go faster, you can grind the sweetness with a knife or break it with your hands.

The melted chocolate is sent to the whipped creamy-curd mass and the last time we turn on the mixer.
