Grated pie with jam is the option of baking, the dough for which you can always keep on hand in the refrigerator and, if necessary, quickly prepare sweets for tea according to any recipe suggested in this article.

Classic grated pie with quick jam

In order to knead the dough according to the classic recipe, you will need the following products:

  • butter - 250 g;
  • egg CO - 2 pcs.;
  • granulated sugar - 200 g;
  • sifted wheat flour - 500 g;
  • soda - ½ tsp;
  • baking powder and soda - on the tip of a knife.

For such a test, the eggs and butter should be chilled.

  1. Grind the egg with sand until white foam.
  2. Cut the butter into small pieces and add to the egg mixture.
  3. Work the mass well with a mixer.
  4. Mix flour with soda, baking powder and salt.
  5. Pour the resulting egg-oil mixture into the prepared flour.
  6. Knead a thick dough. It is important to knead it to smoothness so that it does not stick to your hands.
  7. Divide the dough into two pieces, one of them should be a little larger. Set the dough to rest under the film for 30 minutes.

For the filling, you can take any jam or jam. If it is liquid, then you can boil it to a thick state.

  • jam - 250 g;
  • flour (starch) - 20 g.

Warm the jam, stirring constantly, and gradually adding flour or starch. Evaporate excess liquid and when filling thickens, remove from stove.

  1. Grease the container where the cake will be baked, or lay it with parchment.
  2. Roll a large piece of dough into a thin layer and put it in a mold.
  3. Gently spread the filling on top.
  4. To close the pie on top, you need to grate a smaller piece on the grater, evenly distributing it on the surface.

Bake for approximately 25 minutes at 190 C.

Margarine Recipe

 

Based on the recipe proposed above, you can cook the same grated pie with jam on margarine. But in this case, it is worth reducing the portion of the spread or margarine by 50 grams and add 30 ml of vegetable oil. Then the dough will be more magnificent. And before working with the test, it should be put in the refrigerator for 20 minutes, then it will not crumble when rubbed.

Grated pie with jam and cottage cheese

Using cottage cheese and jam, you can cook an excellent two-layer dessert. In this taste harmony, strawberry, cherry or blackcurrant jam will sound best.

  • butter - 300 g;
  • egg CO - 3 pcs.;
  • granulated sugar - 260 g for dough and 80 g for filling;
  • sifted wheat flour - 520 g;
  • soda - 1 tsp;
  • baking powder and salt on a pinch;
  • cottage cheese - 300 g;
  • cherry jam - 250 g.

Preparation of the test:

  1. Beat the diced butter with sugar until a single mass is formed.
  2. Insert eggs into this mixture and beat again.
  3. Add flour, salt, baking soda and baking powder.
  4. Knead the dough and put it in the refrigerator for 20 minutes.

Curd for the filling should be prepared as follows:

  1. Rub the cottage cheese thoroughly through a sieve.
  2. Add sugar to the prepared mass and beat with a mixer.

After everything is ready, the dough needs to be removed from the refrigerator and divided into three parts. Cover the heat-resistant dishes with parchment and the first piece, grate the dough on a grater, distributing the resulting mass in an even layer. On top of the first layer you need to lay the cottage cheese, gently smoothing it with a spatula. The filling should recede from the edge of the cake 0.5 cm. Dough is rubbed over the cottage cheese again. And now the jam is laid out. The cake is also covered with grated dough.

Bake 30 - 35 minutes at 180 C.

With apple jam

Using the previous recipe, you can make grated small cake with homemade apple jam if you divide the proportions of the ingredients in half.

The filling can be prepared according to the following recipe:

  • sweet and sour apples - 300 g;
  • granulated sugar - 150 g;
  • lingonberry - 50 g.

Grated Pie Technology:

  1. Peel the apples and grate.
  2. Put the resulting mass into a pan and add lingonberries.
  3. Pour sugar and boil.
  4. Discard jam on a sieve.

After the jam has cooled, the thick part can be used as a filling, and the expressed syrup can be served as a sauce for the pie.

Simple grated egg-less jam pie

The same wonderful option is a grated pie with jam without eggs. The delicacy is less caloric.

For the test:

  • butter - 250 g;
  • sifted wheat flour - 600 g;
  • granulated sugar - 200 g;
  • salt, baking powder and soda - ½ tsp.

Technology step by step:

  1. Put the flour in a bowl, add bulk ingredients.
  2. Gradually pour warm oil and manually grind flour with it until crumbs are formed.
  3. Put the baking dish on parchment, which with a pastry brush should be anointed with the remnants of melted butter.
  4. Put half of the crumbs in an even layer on parchment.
  5. Put the selected jam on top.
  6. Put the remaining crumb on top.

Bake for 25 minutes at 170 C.

With currant treat

If frozen currants remain in the refrigerator in the summer, then it can serve as the basis for the pie, the dough for which can be made according to the above recipe.

The filling can be done according to the following recipe:

  • red or black currants - 300 g;
  • dry mint - a pinch;
  • fresh ginger - a small piece;
  • starch - 1 tbsp. l .;
  • granulated sugar - 200 g.

Cooking step by step:

  1. Sprinkle currants with sugar and leave to defrost.
  2. Peel the ginger.
  3. When the currant gives juice, put the heat-resistant dishes on the stove and boil the berries, after adding mint and ginger.
  4. After the sugar has completely dissolved, remove the ginger from the jam.
  5. Add starch to the currant and cook until thickened.

With this filling, the cake is prepared using a similar technology with the apple version.

From shortcrust pastry

Shortcrust pastry pie can be made by rubbing the dough on a grater.

  • wheat flour - 250 g;
  • granulated sugar - 100 g;
  • butter - 100 g;
  • margarine - 50 g;
  • egg CO - 1 pc. + 1 yolk;
  • baking soda, baking powder and salt.

This dough is tender.

  1. Beat butter with margarine.
  2. Beat the egg, yellow and sugar in a separate bowl.
  3. Mix flour with salt, soda and baking powder.
  4. Mix and knead all three masses until a thick dough is formed.
  5. Roll the dough into a sausage and put in the refrigerator for 30 minutes.

On this basis, pies with fruit jam with a delicate structure are excellent.

With apricot jam

The taste and aroma of apricot jam combined with shortcrust pastry are delicious pastries.

  1. Remove the prepared shortcrust pastry from the refrigerator and divide into 2 parts.
  2. Roll one part into a layer with a thickness of about 0.5 cm.
  3. Put the layer on a greased baking sheet.
  4. Gently spread the filling.
  5. Grate a thin top layer of dough on top.

Bake for 25 minutes at a temperature of 185 C.

Whipped tender raspberry dessert

First you need to make a raspberry jam cake. But by special technology.

  1. The dough is prepared according to the basic recipe.
  2. The bottom layer rolls out about 0.3 cm thick.
  3. With a pastry brush, raspberry syrup is applied on top.
  4. Again a thin layer of dough is laid out.
  5. Now raspberries are laid out together with berries, and the cake is layered with a thin layer of dough.
  6. Then another layer of jam is laid out and on top of it a top layer is rubbed on a grater.
  7. After the cake is ready, you need to wait until it cools down and cut it into small portioned pieces with a face of about 1, 5 cm x 1.5 cm. Gently place the pieces in a bowl and pour the whipped cream on top.

Attention! The dough can be prepared in advance.

  • in the refrigerator, the dough with the addition of eggs is stored for 3 days, in the freezer for about 1 month;
  • the dough without adding eggs in the refrigerator can lie for a week, and in the freezer for up to two months.
