Cake "Drunk Cherry" - a classic recipe

The classic recipe involves the use of the following products:

● 2 cups pitted cherries;
● semi-sweet red wine;
● two cups of premium flour without a hill;
● 6 eggs;
● 4 tbsp. l cocoa;
● one and a half glasses of sugar;
● one and a half tsp baking powder;
● can of condensed milk;
● chocolate chips for decoration.

A simple recipe and it is prepared very quickly and easily:

1. Prepare cherries, washing them and pouring wine. There should be enough drink so that the berries are completely immersed in it. We put them in the refrigerator for a couple of hours.
2. Then you should separate the proteins from the yolks and beat with sugar into a lush smooth mass. We introduce the yolks, without stopping to work as a mixer.
3. Stir together the flour, baking powder and cocoa.Introduce into the egg mass and mix the dough with a whisk.
4. Bake in a mold measuring 20–23 cm at 180 ° C for 30–35 minutes.
5. Remove the biscuit, cut off the top and gently pulp out the pulp with a spoon to form a biscuit shape - the sides and the bottom are 1.5 - 2 cm thick.
6. Cooking cream. Beat butter with condensed milk until a lush smooth mass is obtained. A third is left for decoration, and most of the pieces are put in cream and here we spread the berries. Mix.
7. Brush the biscuit shape with the wine juice that remains of the cherries and spread the resulting filling into the base. The cut top should also be soaked with juice and close the cake with it.
8. It remains to cover the future cake on all sides with the remaining cream and sprinkle the sides with the remnants of crumbs.
Decorate the dessert with chocolate chips and berries, and if a little cream is left, then you can make roses with a confectionery syringe.
The cake should be left to soak and only after that proceed with tasting.

On a note. Fresh cherries are recommended to be soaked in alcohol for at least 2 days, mixed well with sugar. But about 2 to 3 hours will be canned. Of course, the longer this process lasts, the richer the taste.

Cooking dessert in a slow cooker

For toppings and decorations:

● 5 yolks;
● 1 ½ tbsp. Sahara;
● ½ tbsp. flour;
● 3 tbsp. l cocoa;
● 300 g of melted butter.

For the test:

● 3 eggs;
● 1 tbsp. sour cream;
● 1 tbsp. Sahara;
● 150 g of condensed milk;
● 1 ½ tbsp. flour;
● 3 tablespoons of cocoa;
● 1 tsp soda and vinegar to pay it off.

Description of the preparation:

1. Prepare cherries in advance, fill it with cognac for the night. Before use, let drain the syrup from the berries through a colander. It must be left for impregnation.
2. Drive eggs into a bowl, beat and add sugar, without stopping the mixer.
3. Add sour cream and condensed milk, re-mix the composition for 1 - 2 minutes.
4. Pour flour and cocoa into the workpiece, mix with a spoon / spatula so that the dry ingredients are well wetted. And only after whip the resulting mass with a mixer.
5. We put soda slaked with vinegar in it and mix the dough at low speed.
6. Put it in a multi-cooker bowl and bake a biscuit in the “Baking” mode for 30 to 40 minutes. We take out a double boiler and let cool.
7. For the cream, beat the yolks with sugar, add flour and milk. After adding each product, we quickly work out the mass with a mixer. Then we put it in a water bath and slowly mix - the cream will thicken.
8. Beat soft butter at medium speed, gradually introducing cocoa and sugar.
9. The thickened cream is cooled to a warm state, combined with an oil billet and mixed so that there are no lumps. Pour the cherry and mix.
10. As in the previous recipe, remove the pulp from the biscuit, crumble it and mix the crumbs with the cream. Soak the sponge cake with the rest of the juice.
11. Fill the base with the filling, slightly tamping it with a spatula, and close it with the top. Leave the dessert to soak for a couple of hours.
We decorate the cake to our taste and serve.

No alcohol added

The classic “Drunk Cherry” cannot be cooked without berry pickled in alcohol. But in some circumstances, for example, for a children's holiday, a dessert just needs to be prepared without using this drink.
To prepare such a cake, you can use ordinary canned cherries, draining juice from it. The liquid can also be used to impregnate a biscuit base.
Otherwise, the execution of the recipe is no different from other options.

Drunk Cherry Cake with Custard

For custard you will need products:

● 250 g of milk;
● egg;
● a quarter cup of sugar;
● 1 ½ tbsp. l flour;
● half a pack of warm oil;
● a couple of pinches of vanilla or a drop of its extract.

Cream preparation is very simple:

1. The egg should be beaten with a whisk until smooth. Then introduce sugar and beat the composition for several minutes by hand until lightened.
2. Sift flour, vanilla into the billet and add some milk.Stir so that the flour is well dispersed, and there are no lumps left. We pour out all the milk and carefully work out the mass with a whisk.
3. Install the cream in a water bath and heat for 10 minutes. Then we begin to stir the composition for uniform heating and cook for about half an hour - during this time it will thicken.
4. Cool the cream by placing the bowl in cold water.
5. Beat the mixer with soft butter to make it light and smooth. Then gradually add cream to it without stopping whipping.
Such a cream can not be stored for more than 2 days.
