Simple curd envelopes with sugar

This is a recipe for Karelian cuisine: curd cookies - curd envelopes.

Ingredients:

  • margarine - 1 pack;
  • cottage cheese - 300 g;
  • flour - 2 glasses with a slide;
  • salt;
  • vanillin;
  • baking powder;
  • sugar to taste - about half a cup.

Cooking:

  1. Softened margarine combine with mashed cottage cheese.
  2. Add flour and baking powder to the mass (or replace 0.5 tsp. Slaked soda with vinegar).
  3. Add salt to taste, vanillin - optional.
  4. Mass well knead.
  5. Place the lump of dough in the refrigerator (preferably in the freezer) for 1.5 hours.
  6. Roll the curd dough into a sausage, cut into equal pieces, knead into cakes.
  7. Sprinkle each with sugar, fold in half and squeeze lightly.
  8. Sprinkle with sugar again, curl again, pinch the edges.
  9. Preheat the oven, bake puffs until cooked for about 30 minutes.

To make the dough based on cottage cheese easily rolled, moisten the rolling pin with cold water.

Curd envelopes with sugar remain delicious for several days.

Cooking with apples

Delicate envelopes with a spicy taste of caramel apples just melt in your mouth. They will appeal to adults and children.

For the test you will need:

  • wheat flour - 200-250 g;
  • cottage cheese - 200 g;
  • butter - 1 pack;
  • a pinch of salt;
  • vanillin - optional.

For a flavorful filling, take:

  • apples of any grade - 300-400 g;
  • sugar - 4-5 tbsp. l .;
  • butter - 15-20 g;
  • cinnamon (powder) - 0.5 tsp.

To grease cookies before baking, you will need one egg, to sprinkle already finished products - about 4 tbsp. lpowdered sugar.

For cottage cheese dough, it is better to get the oil from the refrigerator in advance, for 50 minutes - to become soft.

Cooking:

  1. Grind cottage cheese so that there are no lumps.
  2. Sift the flour. This is not necessary, but oxygenated flour will make the dough more airy.
  3. Mix flour, cottage cheese, butter, salt in a bowl. Optionally add vanillin.
  4. Knead the dough well, wrap it in plastic wrap, and refrigerate for 40 minutes.
  5. While the dough is cooling, prepare the filling. Peel the apples (optional), chop finely enough.
  6. We put the pan on a small fire. When heated, melt the butter and add sugar. Mix well and wait for the initial state of caramel.
  7. Pour apples into the caramel mass, add cinnamon and stew, stirring constantly. When the slices become soft, soaked in caramel syrup and become amber, you can remove from the heat. The filling is ready.
  8. We shift to a plate, let cool.
  9. Getting to the envelopes: roll the cold dough to a thickness of about 4 mm.
  10. Cut into squares with a side of about 10 cm.
  11. Put the filling in the center of the square: a little to make a pie.
  12. We thoroughly pinch the edges: the apple envelope is ready for baking.
  13. Preheat the oven in advance.
  14. Place the envelopes on a baking sheet with parchment paper.
  15. Grease with a beaten egg, bake for about half an hour.
  16. Sprinkle generously with powdered sugar.

From puff pastry

To prepare delicious puffs, you only need time to prepare the filling. We buy ready-made dough.

For the filling on the packaging of yeast-free puff pastry you will need:

  • 2 packs of cottage cheese;
  • sour cream 15% - 3 tbsp. l .;
  • 1 egg
  • 100 g of raisins;
  • 3 tbsp. l Sahara;
  • vanillin.

For sprinkling, take 2 tbsp. l one of the ingredients:

  • sesame seeds;
  • sugar (powder);
  • cinnamon.

For lubrication: 1 egg.

Cooking:

  1. Defrost the layers of dough.
  2. Cooking the filling: first grind the cottage cheese in a blender.
  3. The washed raisins are steamed in boiling water for 3-5 minutes, drain the water and put into the curd.
  4. Then add all the components to the filling (put vanilla on request).
  5. Roll out the dough, cut into squares of the desired size.
  6. We put the filling, give the puffs the shape of envelopes and pinch the edges.
  7. We spread them on parchment.
  8. Top - beaten egg and sprinkle.
  9. Baking takes about 20 minutes. The temperature of the oven is 180 degrees.

Curd envelopes that melt in your mouth

This yeast baking is also called cheesecake.

In the dough:

  • milk - 1 cup;
  • margarine - 200 g;
